7 Lady Vineyards at Dover Hall: How Sense of Place elevates Weddings and Corporate Events in Virginia

Dover Hall Experiences (DHE), the hospitality group behind Richmond, Virginia’s Dover Hall, Bartizan Events and, 7 Lady Vineyards (7LV) hosted a delicious Lunch & Learn tasting event on Wednesday, February 11th.


The Lunch & Learn was run by Compass Club, an employee-driven culture initiative. It gathered team members from all departments for a wine and food pairing that was part wine masterclass, part celebration, and entirely focused on what makes Dover Hall, Bartizan, and 7 Lady Vineyards different from other venues. The tasting was a powerful reminder that education fuels excellence, and that excellence, when shared, is contagious.

A Philosophy Rooted in Terroir

From the start, Chad Hornik's and Jeff Ottaviano's 7 Lady Vineyards (7LV) has recognized a simple truth: Not every grape thrives in Virginia's climate and soils. This belief has shaped a national and international portfolio built through partnerships with top winemakers in regions where each varietal excels—what we call Sense of Place.


7LV honors this guiding cornerstone by sourcing grapes only from regions where each varietal naturally thrives. This means estate-grown Virginia wines, collaborations with the state's top growers in the best AVA's, and exclusive partnerships with world-class winemakers around the globe. Every bottle delivers a clear taste of its unique origin.

As of 2026, 7 Lady Vineyards offers 22 wines from some of the world's best wine-growing regions. 7LV's portfolio spans eight Virginia-grown wines: Chardonnay, Viognier, Petit Manseng, Cabernet Franc, Rosé, Albariño, Merlot, and Meritage. It also includes Cabernet Sauvignon from Napa Valley, Pinot Noir from Willamette Valley, Rioja from Spain, Malbec from Mendoza, and Pinot Grigio from Veneto, Italy. Each wine is true to its varietal, expressive of its origin, and a reflection of 7LV's commitment to excellence. During the Lunch & Learn, seven wines from the 7LV portfolio were tasted by team members to illustrate each wine’s unique origin story, and the team learned how to share that story with guests with confidence and passion.

When Rising Stars Take the Lead

In keeping with DHE’s dedication to employee development, the Lunch & Learn gave its gifted and hard-working talent a chance to shine. Award-winning Executive Chef, Leah Randolph, stepped back while five sous chefs took center stage. Priscila Ishii Soares, Danae Perry, Adrian Vasquez, JuJu Pamplona, and Joe Empson each designed bespoke canapés to tell a story that paired with a specific wine. Each bite carried intention.


Priscila paired Salmon Joe with crispy shrimp to the bright bubbles of our Moldovan Brut Reserve. Adrian created honey orange chicken skewers for Dover Hall's estate-grown Viognier. JuJu matched her Thai shrimp with mango and papaya salad to the 7LV Albariño wine made with 100% Virginian fruit.


 

One highlight of the afternoon was the 7 Lady Vineyards Cabernet Franc comparison. It was a taste bud duel between two cab francs in the portfolio and a terrific way for co-owner Chad Hornik to teach the team about color, texture, mouthfeel, and balance. The Lunch & Learn focused on Sense of Place, and Chad used the two wines to show how climate, soil, and human decisions can impact what you taste in your wine glass.


First up was the 7LV estate-grown South Block—harvested "just over there" which brought notes of black cherry and Goochland herbs. Joe paired it with his meatball, tzatziki, and cucumber salad. Next, Chad poured the 7LV Napa Cabernet Franc, a wine he and Jeff created with Reynolds Family Winery, located just south of the Stag's Leap District on the Silverado Trail. It offered a smoother, structured finish of cocoa and espresso. JuJu paired it with beef cheek ravioli.


 

Danae closed the afternoon with a tres leches cupcake topped with whipped cream and a strawberry, perfectly balanced against the bold 7LV Malbec from Mendoza, Argentina.

Shifting Roles, Building Depth

Front-of-house team members Cedar Moore and Rylee Moore stepped up from their usual roles as Banquet Captains and led the team as Event Managers. The pair orchestrated service flow while co-owners Chad Hornik and Jeff Ottaviano handled wine education. Justin Chan and Jessica Roby stepped into the role of Banquet Captains, managing glassware, clearing, and table resets.


These role shifts gave team members a chance to practice skills outside their usual scope, to collaborate across departments, and to build confidence that carries forward into guest-facing moments.
